Strawberry and speculum vacherin with whipped cream
For 2 people
250 grams of strawberries (marat des bois, gariguette...)
FOR THE WHIPPED CREAM
25 cl of liquid cream
1 teaspoon of maple syrup
3 drops of rose water
3 drops of orange flower water
FOR THE DECORATION
2/3 mint leaves
30 grams of powdered sugar
1 circle of 10 cm diameter and 5 cm height
PREPARATION OF THE STRAWBERRIES
Set the strawberries aside in a colander so that the rinse water can drain off.
PREPARATION OF THE WHIPPED CREAM
Mix the liquid cream and maple syrup in a bowl.
Montez la crème en chantilly.
Add rose and orange blossom water at the end. Adjust the consistency.
For the whipped cream to rise better, the cream must be cold. Therefore, do not take it out of the refrigerator until the last moment.
We also recommend that you chill the bowl that you will use to assemble it for a few minutes.
Take two plates. Place a 10 cm diameter circle on your first plate. Crush 2 or 3 specula inside coarsely. Place the whipped cream on the specula (save some whipped cream and strawberries for the second plate). Arrange the strawberries gently on the whipped cream. Coarsely chop 1 or 2 mint leaves to place on top of the strawberries. Sprinkle lightly with powdered sugar. Turn out gently. Repeat the same operation for the second plate.
