Duck breast with passion fruit
For 2 persons :
1 duck breast
3 passion fruits
1 large shallot
1 teaspoon of balsamic vinegar
1 pinch of fleur de sel
1 pinch of pepper
PREPARATION OF THE SAUCE
Scoop 3 passion fruits into the pan and mix them with the cooking juices of the duck breast.
Cook over low heat, stirring regularly, for 5 minutes.
Add the finely chopped shallot. Fry for a few minutes over medium heat.
Finally, deglaze the sauce with balsamic vinegar. Add salt and pepper to the reserved slices of duck breast.
Heat the duck breast pieces for 1 minute on low heat in this sauce.
COOKING THE DUCK BREAST
Cut the duck breast into thick strips.
In a heated non-stick pan, brown the slices of duck breast for 30 seconds on each side.
Reserve the duck breast and keep the cooking juices in the pan.
It is advisable not to put any fat in the pan, the fat of the duck will be enough.
