CHATEAU DE FARGUES

AN EXCEPTIONAL WINE

Château de Fargues produces one of the great wines of Sauternes. The magic of this name lies in the action of theBotrytis cinerea , a microscopic fungus better known as « noble rot » .

When it appears in autumn, the juice in the grape is transformed, it loses its volume to acquire flavors of candied fruits and aromas of flowers.

The vineyard is planted with two grape varieties: Semillon (80% of the surface) which brings fatness, roundness and ample structure to the wine and Sauvignon Blanc (20% of the surface) cultivated for its aromatic side and its great freshness.

In Fargues, quantity is not the goal. It is indeed the quality, vineyard of Fargues  seeks to capture and bottle the aromatic explosion all that makes its wine.

The know-how of  the Lur Saluces , their age-old experience, their absolute demand for quality, make Château de Fargues an exceptional wine.

This unconditional search for excellence is illustrated by the family motto: “Noch” – “Encore” which means “always further in the search for quality, elegance, refinement, without any compromise”, such is the  philosophy at Château de Fargues.

All efforts are aimed at the single label, the single wine, which has made the reputation of the estate.
The estate does not want to present any imperfect vintages, which implies not signing the wine of the en  1972, 1974, 1992  and  2012 vintages.

Obstinacy

The constant search for quality in the work of the Fargues winery makes this sweet white wine
the very successful expression of a great Sauternes: a subtle balance between sweetness and freshness, between candied fruits and acidulous fruits, between floral bouquet and minerality.

Extravagance

The aromatic explosion of a Château de Fargues is obtained at the price of a real sacrifice since the botrytis will leave barely one glass of Fargues per vine instead of one bottle in a normal harvest!

The solution is simple but costly: it is necessary to ask the grape-pickers to select the bunches or even the fractions of bunches, and even the grapes, attacked and transformed by the botrytis cinerea. The grape pickers are forced to sort the grapes and throw away what belongs to the grey rot, the bad botrytis cinerea.

Moment of truth

The magnified juice will then undergo, in the secrecy of the cellar, a second modification, the yeasts partially transform the sugar into alcohol, the must becomes wine.

Symbiosis

The men and women of Fargues will try to domesticate this phenomenon throughout the year, by preparing and maintaining the soils and by the care given to the vines thus favoring its action at the propitious moment of the over-ripening of the grains.
