Picking began on 11th September. This first part of the harvest lasted for three days. The evening temperatures then became quite cool, and unsettled weather set in for 3-4 days. The grapes ripened slowly and botrytis was only able to work its magic towards the end of the month. A second round of picking started three weeks later, on the 2nd of October, and continued on either the 9th or the 12th, depending on the plot. At this point, a period of morning mists followed by beautiful sunny afternoons set in – textbook conditions for botrytis! The three subsequent rounds of picking lasted practically non-stop from the 13th to the 24th of October. There was no need to hurry, leaving plenty of time for botrytis to finish its job of concentrating the grapes.
SCORES AND TASTING COMMENTS
The de Fargues 2007 has a very typical de Fargues nose that has lost its tongue at first, but it opens up to reveal a slightly spirituous bouquet with clear honey, pressed flowers, almond and a distant scent of the sea. The palate is medium-bodied with very fine tannins and outstanding delineation. It is utterly harmonious with a thrilling, edgy finish that expresses the terroir with great clarity. There is an effervescent quality that really takes the 2007 to another level, while the marmalade and white pepper finish is powerful and leaves a lasting impression.
