Château de Fargues 1995 : The complexity of clay-gravel terroir
A “lightening quick” harvest to avoid the trap of too much concentration.

HARVEST

Picking started on 27 September with a first pass. It was a race against the clock from that point on, especially to avoid overly-concentrated grapes that would have made the wine practically impossible to ferment. The two first weeks of October were entirely taken up by 2 passes that produced extremely rich, concentrated fruit. The harvest ended on 11 October. This vintage gave us a few worries in September, but the results in October were very successful.

« […] le bouquet de ce vin aux odeurs raffinées de liqueur de poire et de genêt avec des touches de coing et de pain d’épice sur fond mentholé. Rond, gras, fin et frais, le palais est de la même trempe. Après avoir attaqué en douceur, il montre sa structure et son gras tout en gardant sa finesse avec un léger côté mandarine confite. En finale, il laisse éclater sa puissance et sa richesse aromatique. »
