INGREDIENTS FOR TWO PEOPLE
- 1 duck breast
- 3 passion fruits
- 1 large shallot
- 1 coffee spoon of balsamic vinegar
- 1 pinch fine sea salt
- 1 pinch pepper
PREPARING THE SAUCE
Scoop out the 3 passion fruits into the fry pan and mix with the cooking juice from the duck breast. Simmer for 5 minutes, stirring regularly. Add the finely chopped shallot. Brown for several minutes at medium heat.
Finish by deglazing the sauce with balsamic vinegar. Season the sliced duck breast with salt and pepper. Heat the pieces of duck for 1 minute at low heat in the sauce.
COOKING THE DUCK BREAST
Cut the duck breast into thick slices. Brown the slices for 30 seconds on both sides in a hot non-stick fry pan. Set the pieces aside and keep back the cooking juices in the fry pan.
It is advised not to put any fat into the fry pan since the duck fat is sufficient.
